Nathan's gooey meat sandwich

 ingredients: 

smoked roast sliced thin. (Warmed)

2 slices of bread for each serving. 

1/3 cup miracle whip

1/8 cup tamed jalapeƱos 

1/8 tsp minced garlic


Directions 

Mix mayo, jalapeƱo and garlic in a bowl. Butter one side of each slice of bread. Spread mayo mixture on other side of bread. place one slice of bread on grill butter side down, sprinkle with mozzarella then thinly sliced meat, add more mozzarella and then the final piece of bread, butter side up. Grill on both sides until golden brown and gooey.

Chicken Salad

Ingredients

2 cups cooked chicken, chopped (I use rotisserie chicken from Costco)

1T lemon juice

1/2 cup mayonnaise 

1/4 t salt

1/4 t pepper

1/3 cup toasted almonds, chopped

2 stalks celery, chopped 

1-2 cups purple grapes, sliced in half


Directions

Combine all ingredients in a large bowl. Serve on croissants or as is.

Turkey Meatball Subs

Ingredients
  • 1 1/2 pounds lean ground turkey
  • 2 eggs
  • 1/4 cup breadcrumbs
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh basil, minced
  • 1 teaspoon cumin
  • 1 1/2 teaspoons dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • For the Sauce:
  • 1 tablespoon olive oil
  • 2 cloves garlic, chopped
  • 1 (15oz) can plain tomato sauce
  • 1/2 teaspoon red chile flakes (or to taste)
  • 1 teaspoon sugar
  • salt to taste (my tomato sauce already includes a fair amount of salt, so I didn't need much, maybe 1/4 teaspoon; some tomato sauces have less so you may need to add more)
  • 6 ounces mozzarella, shredded
  • 2 tablespoons fresh basil, chiffonade
  • For the Garlic Bread Buns:
  • 6 long sandwich rolls
  • 1 garlic clove, minced
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons butter, melted
Instructions
  1. Preheat oven to 400 degrees. Line a large baking sheet with aluminum foil or parchment.
  2. To a large bowl, add the ground turkey, eggs, breadcrumbs, oregano, basil, cumin, mustard, salt, garlic powder, pepper, and cayenne, if using. Mix together until combined. Shape mixture into 2-3 inch meatballs and place them on the prepared baking sheet. Bake for 20-25 minutes until cooked through and browned.
  3. Meanwhile, make the sauce by heating the olive oil in a 12-inch cast iron skillet over medium heat. Add garlic and pepper flakes, stirring, one minute, or until fragrant but without browning the garlic. Add tomato sauce to the pan, followed by sugar and salt. Turn heat to medium-low and allow to simmer until the meatballs are finished baking.
  4. When the meatballs are done, add them to the skillet with the sauce. Spoon the sauce over the meatballs to coat.
  5. For the Buns:
  6. Turn the oven up to broil. In a small bowl, combine the garlic, olive oil, and butter. Brush the garlic butter mixture onto the insides of the buns and broil until toasted and browned. Remove from oven.
  7. Place 2 or 3 meatballs onto each toasted bun. Spoon some additional sauce over top of the meatballs. Top with shredded mozzarella and return the sandwiches to the broiler for another minute or two, until the cheese is melted and slightly browned. Remove from oven and sprinkle with fresh basil. Serve promptly.

Sloppy Joes

My sister made this for me the other day. She found it on mykitchencafe.blogspot.com It's probably the best Sloppy Joes I've ever had!!

Sloppy Joes with Potato Rolls
adapted from Dave Lieberman

2 tablespoons vegetable oil
2 onions, roughly chopped
2 ½ pounds ground beef
2 tablespoons tomato paste
2/3 cup smoky BBQ sauce (or whatever BBQ sauce is in your fridge)
½ cup ketchup
¼ cup Worcestershire sauce
¼ cup soy sauce
Freshly ground black pepper
8 to 12 potato rolls
Preheat oven to 300 degrees.

Heat the oil in a large skillet over medium heat. Add the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Add the beef and cook, stirring and breaking up the meat, until it is finely crumbled, the liquid boils off and the meat begins to brown, about 10 minutes. Stir in the tomato paste, and keep stirring until the meat is coated. Add the BBQ sauce, ketchup, Worcestershire, soy sauce, and pepper, and bring to a boil. Cook until the sauce is slightly thickened, 4 to 5 minutes. You can make the sloppy joe up to 2 days in advance and reheat it over low heat or in the microwave.
Wrap the rolls in aluminum foil and warm in the oven for about 10 minutes. Serve the sloppy joes hot with the warmed rolls.
