Snickerdoodles

1 1/2 cups sugar 
1/2 cup butter or margarine, softened 
1/2 cup shortening 
2 eggs 
2 3/4 cups flour 
2 teaspoons cream of tartar
1 teaspoon baking soda 
1/4 teaspoon salt 

1/4 cup sugar 
2 teaspoons ground cinnamon 

Mix Sugar, butter, and shortening until fluffy. Add eggs one at a time. 
In a separate bowl, combine flour, cream of tartar, baking soda and salt. Add flour mixture to Butter mixture. Chill dough for 15-30 minutes. 

 In a small bowl, combine remaining sugar and cinnamon Roll dough into balls and roll into the sugar mixture. Place on cookie sheet and bake at 350 for 8-10 minutes. I like to slightly under-cook my cookies. 

I take them out of the oven and let them sit for a few more minutes on the cookie sheet. Let them cool on a baking rack and store in an airtight container.
