ATK Sticky Buns

 Sticky Buns

Ingredients 

Dough:

1 1/3 oz bread flour

2/3 c water

2/3 c milk

1 egg + 1 egg yolk

15 1/8 oz Bread flour

2 tsp instant yeast

1/2 tsp salt

3 Tbsp sugar

6 T unsalted butter


Sauce:

6T unsalted butter, melted

1/2 cup brown sugar

1/4 cup sugar

1/4 c dark corn syrup

1/4 tsp salt

2T water 

1 cup toasted and chopped pecans


Filling:

3/4 cup brown sugar

1 tsp cinnamon


Directions:

Dough: Mix flour and water in microwave safe bowl. Microwave 75 seconds. Mixture should be sticky and resemble a thick glue.

Add mixture to mixing bowl and add milk. Whisk to incorporate.

Add eggs, bread flour, and yeast. Mix on low speed 2 minutes until combined.

Let rest for 5 minutes then add salt and sugar. Mix med-low speed for 5 min.

Add butter then mix on med-low speed 5 min.

Flour countertop and turn dough out. Knead to bring together and form a tight ball. Place dough in greased bowl, spray top with cooking oil and cover with plastic wrap. Let sit until doubled in size.

Sauce: Whisk together butter, sugars, corn syrup, and salt. Then add water. Place sauce in bottom of greased 9x13 pan then sprinkle pecans over sauce.

Filling: Combine sugar and cinnamon


Once dough has doubled, turn out onto floured surface and pat into 18x15 in rectangle. Pat filling onto dough, leaving a 1 in border. Roll dough up along the longest side and pinch seam closed. Using floss, cut into 12 rolls and place in pan on top of sauce. Cover in plastic and let double in size. 

Place on rimmed baking sheet and put into 375 oven for 20 minutes. Cover with foil and continue baking 10-15 minutes until it registers 200 degrees. Let rolls sit in pan for 5 minutes before turning out onto platter. Enjoy!
