Lemony Lemon Bars

Crust:
1 cup AP flour
1/4 cup sugar
1/2 tsp salt
Stir until combined then add
8 Tbsp melted butter, unsalted
Mix well and pat evenly in a foil lined 8x8 pan. Bake at 350 for 19-24 minutes, until deep golden brown
Filling:
2/3 cup lemon juice
2 tsp lemon zest
2 tsp cream of tartar
Mix, set aside
In a separate bowl, add
1 cup of sugar
2 Tbsp flour
1/4 tsp salt
3 eggs
3 egg yolks
Mix well add lemon juice
Pour into medium saucepan and heat over medium low heat until it reaches 160 degrees. 5-8 minutes.
Add
4 T butter cubed
Mix until butter is melted. Strain curd and then pour into crust. Bake at 350 until set. 8-12 minutes.
